You've gotta check out Legend of Mana, since it seems you haven't.

But yeah everyone should check out Secret of Mana: Redux, lots of really cool scans and info there.

There are enough added details in the new art that can't be explained by simple upscaling, so either they went back to the original drawings, or had new art drawn based on the old.
